Born in 1977 in France, I have always been passionate about food, thanks to my parents. At 20 years old, I give up scientific studies to start my apprenticeship in a 1 Michelin star fine dinning restaurant, «La Ville Blanche ». There, my passion is fed and  channelled. It is an eye opening experience, that leads me to work in another two 1   Michelin Star restaurants (« l’Alexandrin » and « Chez Catherine »)  and three 2 Michelin Stars (« Le Chabichou », « Jean-Pierre Crousil » and « Le Relais d’Auteuil »), which were, and still are, amongst the best restaurants in France.

In 2002, I  visited one of my sisters, living at that time in Noosa. It only took a few months to fall under the spell of Australia… I return to Europe and accept a position in Ireland (« Woodhill House »), where I can improve my English and experience my first head chef position. Then in 2004, I get sponsored to work in Australia, in Darwin at « Salvatores Cafe », as head pastry chef. After 2.5 years in Darwin, I decide to move to Brisbane and accept a head pastry chef position at « Joseph Alexander Restaurant ». Eight months latter, I am offered the head chef position.
In July 2008, I  leave « Joseph Alexander » and become a personal chef, as this allows me to fully utilise my knowledge, creativity and passion, while staying away from the restaurant’s routine.
