Raspberry Coulis

A very simple and delicious dessert sauce, that is dairy and gluten free, as well as vegan. You can prep a large quantity and then freeze it in air tight container, for a future use.

500g frozen raspberry
75g raw sugar
1 lime, juiced

Put the lime juice, sugar and raspberries in a sauce pan. Bring to boil stirring from time to time, making sure it doesn’t burn on the sides or the bottom of the pan. Let simmer for 2 minutes. Then pass through a fine metal chinois. Let cool down to room temperature before refrigerating.
